Changement d'échelle et structuration : une sociologie du travail marchand sur les circuits longs de légumes biologiques

Abstract : Since the end of the 2000s, organic farming has experienced considerable growth in France, with production and consumption doubling every five years. This thesis, at the crossroads of rural sociology and economic sociology, contributes to the academic debate on the conventionalization of organic agriculture by mobilizing the tools of the sociology of market work. It is based on qualitative surveys conducted among actors in long organic vegetable circuits, mainly in the Hauts-de-France and Centre-Val-de-Loire regions. Observations and interviews were conducted with vegetable producers, economic marketing operators (a cooperative and a trader) and agricultural development organizations acting on a regional or national scale. The author first relates how the "changement d'échelle" of organic agriculture has become an object of concern for professionals dealing with these upheavals. By changing scale, organic agriculture is transforming, its sectors are including new actors, fears are appearing and making the maintenance of the otherness of organic agriculture an issue. He shows how these actors seek to control the development of long-distance organic farming channels and to promote the establishment of sustainable, equitable and supportive market relations. To this end, he details the market work involved in what professionals in the sector call the structuring of supply chains. He shows that this process implies the implementation of a work of education of the actors to the specificities of the organic agriculture, the taking into account of the respective constraints of the various links of the chains, as well as the establishment of devices of commitment in the duration and of collective arbitrations between these links.
