Sociologie des représentations alimentaires et de l’éducation à l’alimentation, pour une alimentation durable dans le contexte de la transition épidémiologique : une étude de cas au sein de quatre écoles élémentaires

Abstract : The prevalence of chronic diseases is growing exponentially and affects more the most precarious populations. Diet represents a major dimension in this context: it can either contribute to preventing the development of chronic diseases, or promote them. The fact of eating depends largely on social and cultural variants, such that we do not only consume what is biologically edible, but also culturally. Sociology of food seems to be able to play a role regarding to public health, by allowing an understanding of the different food representations according to the plurality of social origins. Children are a particularly vulnerable population, in a society in which food has rapidly evolved to become unstructured (notably through its individualization), and also because they are the most targeted by advertising campaigns for ultra-processed foods. We chose to focus our research on children, also because of recent developments in terms of food education in France. A sociological field survey was conducted in four schools in Normandy (sampled in order to represent social diversity), with forty children aged nine to eleven in semi-structured interviews, eight classes in focus-group interviews, and in each canteen via observation sessions. We thus had access to a plurality of children's speeches and food representations, which allowed us to understand how these vary socially: such as the most precarious are more exposed to the risk of developing chronic diseases by their food habitus, but also to carry out an inventory of what is currently food education in France (in elementary schools). We conducted experiments that made possible to conceptualize what is an "adapted" food education (regarding issues of the epidemiological transition as well as to the social reality). While injunctions and slogans have proven to be ineffective, all children can develop an awareness of the links between food and health when they are actively involved in holistic discussions and reflections on the links between food, health and the environment.
