C. Su, leur caractères fruité, acide et chocolat. Les composés volatils recensés notamment l'acide acétique, la tétraméthylpyrazine, l'acétate d'éthyle, l'acétate de 3-méthylbutyle, l'hexanoate d'éthyle et l'octanoate d'éthyle sont parfaitement en accord avec les descripteurs sensoriels. L'étude des souches de levure isolées a permis l'identification de levures communes à nos analyses (Saccharomyces cerevisiae, Hanseniaspora thailandica, Hanseniaspora opuntiae) et d'autres non identifiées dans nos échantillons, 2013.
