Le métier du parfumeur en France et l'art de l'encens au Japon - Contribution à une sociologie de l'olfaction

Abstract : French olfactory discourse has two major positions, individual subjectivity and cultural relativity: there is a distinctive smell sense tendency for each individual and each culture. The first objective is to determine if this narration can be explained by the auto-controlled and egocentric personality, and whether this unbalanced modern personality is caused by the inaccessible ascension to power inside the egalitarian, centralized and monopolized nation-state society in competition with the global society of market. The second objective has a comparative significance, to investigate the diversity and the generality of this auto-controlled and egocentric personality, and whether the relativity of the discourse an expression of the French national society and/ or of the European universalism? According to the empirical research findings of the French Perfumers' Society, personal differentiation individualises the olfactory sensibility. While based on the empirical researches by the Incense Art Master's Society in Japan, it is revealed that the individual differentiation is a general social fact, but differentiated from the distinct process of the formation of each nation-state. The experience of the aforementioned process in Japan cannot be explained by Norbert Elias's hypothesis; the influence of westernization doesn't configure the same way the individuality as Europeanization or colonization. Eliasian hypothesis suggests that, based on the game model, the player-individual's auto-refer-to-others-self foresees the future, is a theorization with generality, but one with experiences originated from the formation of nation-state society in the Western Europe.
