Abstract : This thesis deals with the seasonal organization of the activities at the end of the Mousterian, before the arrival of Anatomically Modern Human in Southwestern France. Its aim is to establish Neanderthal capacities of anticipation and planning in resource management. The seasonality of predation is established by the analysis of cementum increments, which permits the study of a great number of individuals. Seasonal data are considered with all the available information about the hunted population from a zooarchaeological perspective. A critical review of the skeletochronology is proposed to establish the limits and the conditions of application to this method to prehistoric contexts. A study protocol, taking into account post-mortem recrystallisation of the cementum seasonal structures and a probabilistic approach to the sampling, is then proposed. A zooarchaeological and skeletochronological analysis of a Mousterian base camp (Pech-de-l'Azé I) and the skeletochronological analysis of a possible hunting camp (La Quina) and of a kill site (Mauran) make it possible to discuss various aspects of Mousterian subsistence. These results are then compared to those obtained from the Aurignacian site of Isturitz. This work demonstrates the existence of complex subsistence economies with planning of the activities as examplified by site specialisation during the Mousterian. The evidence of seasonal mass kills confirms the presence of anticipation in food stock management.
