Abstract : This thesis deals with the formulation, the analysis of structured models of growth in a chemostat, an experimental device used for microorganisms growth in idealized conditions, and the estimate of non measured variables. After a brief description of the species and the experimental apparatus, we introduce the classical models used for the chemostat and the structured population models with emphasis on cellular division description. Then, two models
described by ordinary differential equation, modeling the growth and the division, are built and studied. To end this part, a model, based on biological mechanisms, describing the storage of the cell (e.g. micro algae) is built and studied. The second part of this thesis deals with the estimate of variables. Then, observability and observers are introduced. Classical observers are built for the structured models described previously. Finally, since in biology a lot of models are badly known, hybrid observers using the measured variables and the knowledge on the model, are built. Other possible
applications conclude this thesis.
